Montasio

Montasio, from the mountain is a semi soft cow milk cheese made in border of the Asiago production area , high in the Friuli Venezia Giulia Alps . The milk is mountain milk so the cheese is bitter higher in butterfat, which adds greater richness and depth to its slightly butterscotchy flavor is normally aged 60 to 90 days but is also available two years aged mostly for grating . The Montasio has a special affinity with ripe pears and a slice of prosciutto san Daniele del Friuli. The best wine with this cheese are the wines from the grave del Friuli like Merlot, Cabernet ,Pinot Nero.
