These anchovies are essential. They have nothing to do with the canned variety which is salty, fishy, bony and greasy.
These are sweet and aromatic by themselves and added to the cooking of meat dishes or used directly in salads bring out the flavor, truly making "the sum greater than the ingredients".
Three or four of these fillets crushed in a mortar, mixed with a squeeze of lemon and a few tablespoons of good olive oil makes a perfect salad dressing.
