Salt cod has become an ingredient of many cuisines around the Atlantic and in the Mediterranean. It is appreciated for its versatility and as a precious source of proteins, minerals, unsaturated fats and Omega 3. The texture is litter denser and holds together better while adding saltier profile to the taste.
Salt cod is part of many European celebrations of the Christmas Vigil, in particular the southern Italian Feast of the Seven Fishes.
Removing the Salt:
- Soak Cod In Water
- Change Water Every 4-6 Hours
- Change Water 3-4 Times
- When Done Place in Refrigerator
Store in a cool dry place.
Salt cod can stay between 18 and 24 months without refrigeration.
