Citric Acid / Acido Citrico by Castella
Citric Acid is derived from the fermentation of lemon, lime and pineapple juice. In addition to adding flavor to a variety of food and beverages, it also controls the acidity of many dishes and keeps some fruits from darkening.
Citric acid is used in everything from soft drinks and flavoring extracts to desserts because of its sour taste.
Store in a clean, cool, dry place free of penetrating odors.

Used it to make home made mozzarella. It worked great!
