The word "rustico", meaning "unrefined" in Italian, is a perfect name for this type of prosciutto. The producers leave most of the fat and skin on the leg instead of removing it. This creates a special taste when it is sliced and the meat is consumed along with the fatty part.

I've ordered this prosciutto several times and really like the rich flavor. It isn't too salty and I enjoy the fat left on for extra flavor. I've order much more expensive prosciutto in the past, which hasn't been as flavorful.
