Parmigiano Reggiano, The King of Cheeses, is named after the provinces in which it is made, namely Provinces of Parma, Reggio Emilia, Modena, Bologna and Mantua.
It has a hard, gritty texture and is sharp and nutty in taste. The cheese is mostly grated over pastas, used in soups and risottos. It cam also be eaten on its own as a snack.

I cut a small slice to sample. One taste and it was obvious this cheese is among the finest. The presence of tyrosine, the crystal like amino acid cluster, confirmed that I purchased a great aged cheese.

Great cheese, a good price, good service. Cheeses were fine when they got here. The pound of cheese does come in two half pound pieces, however, and next time I will request that it be sent in a one pound piece. I hope that is not a problem.
