This type of olive is the dominant variety not only along the Ligurian coast in Italy, but in the countryside around Nice in France as well where it is known as Cailletier. These 1 pound buckets of pitted olives are in a salt brine, and have had just enough of their bitterness removed to be extremely tasty, yet still retain much of their original character. So convenient to eat and cook with thanks to being already pitted, and perfect for making your own tapenade, with all sorts of tasty herbs and spices added, of course!
