Produced in Argentina using cow’s milk, this very hard, granular cheese was invented to closely imitate Italy’s acclaimed Parmigiano-Reggiano cheese. In fact, its name, Reggianito is a Spanish translation for “small Reggiano”. Reggianito forms are much smaller than Parmigiano-Reggiano whole wheels and is saltier as well. It is most often used for cooking or grating, as it is less expensive than its Italian counterpart.
