Tips for a good risotto:
- Store always the rice in fresh and dry places
- Keep the rice away from places with a bad smell
- Do not use too much polished rices
- Never wash the rice
- Never use tight and high pots
- Do not add any cold stock/liquid to a risotto while cooking
When to use the Vialone Nano Rice and when the Carnaroli Rice
The Carnaroli Rice is different from the Vialone Nano one according to its kernel, which is a little bit longer and tapered and it requires a few more minutes to cook compared to the Vialone Nano and, once is cooked, it remains more "al dente".
In addition the condiment's absorption is different: zero for the Carnaroli Rice, it is on the contrary excellent for the Vialone Nano one. Then our advice is to use the Vialone Nano Rice for a very tasty risotto with meat and butter-based sauces, while the Carnaroli Rice is recommended to prepare rice salads and dishes with lighter condiments such as vegetable-based sauces and fish. For both the creamy and the grainy risotto it is adviced to use the Vialone Nano Rice, while the Cranaroli one, releasing a small amount of starch, is suitable for more grainy risotto.
