Named after the commune of Taleggio in the Lombardy region of Italy, Taleggio is a washed rind Italian Cheese with a very strong and distinct aroma, and a fruity, yet mild taste. Its crust had a certain uniqueness because it is thin and studded with salt crystals. Taleggio is believed to be one of the oldest soft cheeses, however, little is known about its history, giving it a sense of mystery. It is produced in the autumn and winter months using cows milk. Its distinct taste comes from the addition of spices, raisins, nuts and lemons during production.
